Pearl Sugar

Nib sugar

Nib sugar is a product of refined white sugar. The sugar is very coarse, hard, opaque white, and does not melt at temperatures typically used for baking. It is usually made by crushing blocks of white sugar and sifting them to obtain fragments of a given diameter, though it may also be produced through an extrusion process.

Pearl

A pearl is a hard, shiny object produced within the soft tissue of a living shelled mollusk. Like the shell of a mollusk, a pearl is composed of calcium carbonate in a crystalline form, which is deposited in concentric layers. More commercially valuable pearls are perfectly round and smooth, but many other shapes, known as baroque pearls, can occur. The highest quality of natural pearls have been highly valued as gemstones and objects of beauty for many centuries. In literature, pearls have become a metaphor for something rare, fine, admirable, and valuable.

Sugar

Sugar is a class of sweet-tasting, soluble carbohydrates, many of which are used in food. Simple sugars, also called monosaccharides, include glucose, fructose and galactose. Compound sugars, also called disaccharides or double sugars, are molecules made of two bonded monosaccharides; common examples are sucrose, lactose and maltose. White sugar is almost pure sucrose. During digestion, compound sugars are hydrolysed into simple sugars.
