Pungency

Pungency, commonly referred to as spiciness, hotness or heat, is a sensation that contributes to the flavor of certain foods such as chili peppers. Highly pungent foods may be experienced as unpleasant. The term piquancy is sometimes applied to foods with a lower degree of pungency that are "agreeably stimulating to the palate". In addition to chili peppers, piquant ingredients include wasabi, horseradish and mustard. The primary substances responsible for pungency are capsaicin, piperine and allyl isothiocyanate.

Cinnamon

Cinnamon is a spice obtained from the inner bark of several tree species from the genus Cinnamomum. Cinnamon is used mainly as an aromatic condiment and flavouring additive in a wide variety of cuisines, in particular sweet and savoury dishes such as biscuits, breakfast cereals, snack foods, bagels, teas, hot chocolate, and traditional foods. The characteristic aroma and flavour of cinnamon derive from its essential oil and principal component, cinnamaldehyde, as well as numerous other constituents, including eugenol.
